Phase 01 · Months 1 to 6

Professional Kitchen Training

Full-time, hands-on training in a professional culinary environment. You learn real kitchen techniques, hospitality standards, food safety, and the discipline that hotel kitchens demand. Taught by experienced industry professionals in affiliation with AVS.
Some candidates may also start evening internship by their 3rd month.

Phase 02 · Months 7 to 12

Paid Industry Internship

You move into a real hotel or hospitality kitchen and work as part of the team. You are paid. You build experience, speed, and professional confidence. By month 12, you have six months of industry experience on your resume.

The Syllabus

What you will learn in 6 months of training.

The curriculum is structured around THSC standards and designed to prepare you for the demands of a real hotel kitchen. It’s not just theory.

Foundation Techniques 

Knife skills, mise en place, heat control, and the core methods every professional cook must master.

Stocks Soups and Sauces

The building blocks of professional cooking. Mother sauces, consomme, reductions, and modern derivatives.

Meat Poultry and Seafood

Classic shortcrust, lamination for puff pastry, and delicate fillings.

Indian and Continental Cuisine

Cooking for both domestic and international hotel guests. Regional Indian dishes (South/North), Italian classics, and plated service. .

Food Hygiene and FSSAI

Safety regulations, kitchen sanitation standards, and the compliance requirements every hotel kitchen enforces.

Plating and Presentation

Visual standards for hotel service. How food looks when it leaves the kitchen is part of the job.

Kitchen Operations

Kitchen hierarchy, line service workflow, station management, and the discipline of working under pressure.

08

Food Costing Basics

Understanding portion costs, wastage control, and why margins matter in hotel food operations.

09

Live Kitchen Service

Practical service sessions with real orders, real timing pressure, and real feedback from instructors.

Starting Salary On Placement

Rs 15,000 to Rs 22,000 per month in your first role.

International placements on cruise lines and overseas properties carry higher packages (~Rs 80,000+). These are industry figures, not guarantees.

Do I need any cooking experience to apply?
None at all. The program starts from the ground up. What matters is that you are willing to work hard, take instruction, and commit to the full 12 months. We have seen complete beginners become confident, employable kitchen professionals by the end of it.
Accommodation details for each batch are confirmed during the counseling process. Our team will walk you through exactly where you will be housed, the facilities available, and what to expect before you travel.
Yes. Assuming that you have cleared your THSC exam and you have at least a minimum of 85% attendance.. What we do provide is active placement support: connecting you with employers, preparing you for interviews, and following up until you are placed. The 6-month paid internship already gives you industry experience, which significantly improves your employability from day one.
The loan is available through Vidya Laskhmi Portal. Most candidates from Nagaland qualify. We guide you through the application process step by step. Repayment begins after you are employed, in structured installments.
